Today is Pazcki day, which is basically a jelly donuts eaten by the Polish before Lent. I have made them before, but not for a few years. It’s a very time intensive and daunting process. This year, I made the dough the night before and then fried them up the morning of. It worked out well.

I took a dozen to work and Ellie took a dozen to work. Her dozen didn’t last past noon. Mine, because we were short-staffed today, made it to about four only because we were donutted out. Not a single hole person had a criticism, though I assume the one body conscious person in the office just stuck up her nose on principle. Her loss, not mine.

Now I need to exercise for a while lot of time because I didn’t walk this morning so I could get, and then I ate a bunch of donuts.

Ooo, one interesting fact. My recipe has vodka in it to keep the donuts light. As they fry, the vodka evaporates out which prevents the oil from soaking in.
